Time for another rundown of this week’s eats! This week I went a little lighter on the cooking. My grocery shopping schedule is still a little off so hopefully I can fix that this weekend!
I love starting the work week off with some leftovers already waiting in the fridge for lunches on Monday. So on Sunday evening when I was debating between whipping up some quick dinner or throwing in a frozen pizza, I went for the leftover producing option: spaghetti!
I used this recipe from Fox and Briar for a quick marinara sauce, but I didn’t have any crushed tomatoes, so I just used diced. That came together in about 20 minutes. Meanwhile, I boiled my favorite whole grain spaghetti from Aldi and cooked up some ground turkey with some Italian spices. I also made Pinch of Yum’s garlic sauteed kale recipe from this post. It was a quick and light dinner that tasted great!
Tuesday night I made this Cowboy’s Meal from The Skinnish Dish. It was fast and made a HUGE pot of goodness. It’s basically ground beef, beans, and hashbrown potatoes all mixed up with spices that you can use for tacos, bowls, or nachos… anything you want. I added less potatoes and an extra can of black beans to beef it up a little bit. For dinner, I made a couple tacos and topped them with onions, cheese, salsa, cilantro and sour cream.
This was dinner on Tuesday, lunches on Wednesday and we still have a good sized container of it in the fridge.
On Wednesday, the weather was finally cooling down (this time I think for good) and I made this Chicken Pot Pie Soup recipe from Gimme Some Oven. I wouldn’t say that it’s as good as chicken pot pie, but it did the trick. I think it could have used some more seasonings… maybe a bay leaf? My husband loved it.
I didn’t have cooked chicken sitting around (who does?) so I altered the recipe a bit to just cook the chicken in the soup: After sauteing the veggies and stirring in the flour, I added the potatoes along with 2 large chicken breasts with the chicken stock and let them cook together simmering for about 15 minutes. Then I shredded the chicken and added the milk. Worked like a charm!
This was dinner on Wednesday and made 4 extra lunches.
Thursday evening, our good friend was coming over for dinner and I didn’t have anything planned, so we decided to do breakfast for dinner! I made Pinch of Yum’s Fluffiest Blueberry Pancakes, these little Broccoli Cheddar Egg Cups from Mindy’s Cooking Obsession, and cooked up some of Aldi’s chicken breakfast sausages. We also had some espresso martinis. It was the perfect breakfast for dinner.
